The bouquet shows light peach, nutmeg spice and a hint of vanilla and cream. The palate has a mixture of peach and tangelo fruit finishing with an orange skin tang of minerality. This wine is certified Organic with BioGro plus being vegan and vegetarian friendly.

Winemaking
A mild and warm growing season with very settled weather made for a busy harvest. The grapes were hand-harvested on the 26th March at 22.8 brix. After being de-stemmed and gently pressed, the juice was settled before being racked off for fermentation. Natural ferment was initiated and once this was underway we added our own wine yeast to help the fermentation to dry.

Over midway through this process the juice is siphoned of into large format and small French oak for 11 months maturation. In Spring the weather warms up and the wine undergoes spontaneous malolactic fermentation while in oak. The wine is bottled after 14 months in the winery.
