In the glass, Sentio Aligoté 2025 offers green pear, citrus and pink grapefruit with yellow flowers, salty pistachio and nutty pastry notes, plus chalk dust and a subtle waxy, savoury edge, all carried on brisk acidity and a saline, energised finish that begs another sip.

On the table it is spot on with oysters, crudo, lightly fried seafood, goat’s cheese salads or grilled asparagus with lemon, and is brilliant as an aperitif white served well chilled – a refreshing, characterful alternative to Sauvignon Blanc or lean Chardonnay.
