Fruit for the Gueguen Chablis is sourced from seven hectares of vines grown around Préhy, Chichée and, now, Courgis. Fruit from the well-regarded lieux-dits of Malantes and Pargues (situated between the Montmains and Vosgros 1er Crus) is included in the mix.

The vineyards mainly face southwest on Kimmeridgian soils with a layer of Jurassic clay and limestone, littered with small oysters and fossils. Vinification and maturation take place in stainless steel only, with regular lees stirring and full malolactic conversion.
