Domaine William Fèvre Chablis 2023 is a benchmark village Chablis – pure, citrus‑driven and mineral, with impressive depth and energy for its level, and sitting on very strong early critical form (roughly 89–92 points across major reviewers).
In the glass it’s pale lemon‑yellow, with a very fresh bouquet of citrus zest and white‑fleshed fruits like apple and pear, plus white peach, white flowers and a whisper of oak. Typical Chablis minerality comes through as crushed stone, shellfish/iodine and a chalky edge. The palate is medium‑bodied, vibrant and nicely concentrated – sherbet‑like citrus, juicy pear and peach over a fine, saline, mineral spine, finishing long, balanced and just firm enough to reward a few years in the cellar.
Food‑wise, Domaine William Fevre Chablis 2023 is made for oysters, prawns, scallops and grilled white fish, where that acidity and saline edge cut straight through brine and richness. It’s also excellent with sushi, goat’s cheese, light chicken dishes or simple pasta with clams, making it a go‑to white Burgundy for both seafood feasts and smarter mid‑week dinners.
