This superb wine is comprised of 80% pinot noir, providing flesh and richness, and 20% chardonnay which, together with the cool vintage, brings bright, lively acidity to the finish. As with all of our sparkling wines, the Méthode Traditionelle was employed. We waited patiently as the wine aged for 42 months ‘on the lees’ (yeast). Pass the oysters!

Subdued aromas of red cherry underlie billowing notes of biscuit, camomile and cheesecloth, expanding with aeration while really saturating the palate. The finish, long, creamy and seamless. Beautifully integrated on all fronts. Excellent value
