Organic. 100% Chenin Blanc. Baudry’s rare Chinon Blanc hails from two small parcels: 0.8 hectares of vines behind the Château de Sonnay (these are propagated with cuttings from the vineyards of Domaine Huet); and the eroded limestone of Le Clos Guillot. Vine age is in the 12- to 15-year ballpark. Matthieu Baudry prefers a slow and delicate pressing and the juice ferments naturally in old 500- and 600-litre barrels until it’s dry. The wine is bottled unfiltered

This wine always has a lovely chalky texture and volume, intertwined with calcareous tension and a saline snap. Simultaneously light and mouth-filling, expect a swell of succulent white fruits, savoury herbs, salty minerals and focused citrus flavours. There’s a lovely texture and a finish teeming with thirst-inducing energy. The intensity and length are fabulous: drink it with anything from the sea, particularly grilled bass or bream (the crisper the skin the better).
