St Anne’s Bendigo Cabernet Sauvignon 2021 (released under the Tatalia label) is a rich, full‑bodied central Victorian Cabernet grown on Bendigo’s classic red loams, delivering dark fruit, spice and proper regional grunt with polish. It sits in St Anne’s premium range, built for both flavour now and medium‑term cellaring.

In the glass, expect deep colour with blackcurrant, dark cherry and plum, touches of crushed herb, capsicum leaf and tobacco, all framed by fine French oak spice after around 12 months in barrel. The palate is concentrated yet balanced – ripe black fruits, cassis and subtle chocolate wrapped in firm but ripe tannins and fresh acidity, giving a long, dry, savoury finish that’s classic Bendigo Cabernet.

On the table, this 2021 Bendigo Cabernet Sauvignon is made for roast lamb, grilled ribeye, slow‑cooked beef ribs or rich casseroles, where its cassis, herb and oak notes really shine. It will also work beautifully with hard aged cheddar or a hearty winter charcuterie spread, and has the structure to evolve gracefully for the rest of the decade.
