Levantine Hill Levant Sauvignon Blanc, crafted by winemaker Paul Bridgeman in the Upper Yarra Valley, Victoria. A vibrant blend of 94% Sauvignon Blanc and 6% Semillon, the wine was whole-bunch pressed, fermented in oak foudre, and aged on lees with minimal stirring-some barrels saw malolactic fermentation for added richness. Pale and lifted, aromas of jasmine, caperberry, rock melon, spearmint, tangelo, and almond biscotti emerge, with subtle bay-leaf and flinty undertones. The palate is deep and enduring, offering crisp lines of Golden Delicious apple, lemon-verbena, and petrichor atop vibrant acidity.
