100% good old Cabernet Sauvignon from our little dry grown organic block in Yallingup. Hand picked, foot stomped, wild fermented in opens & post maceration for a three months. Then basket pressed & aged to perfection in seasoned French oak barriques. Only racked once and sulphured at bottling. No additives, fining, nor filtration to express the wonders of the land. Dormilona

This is the first wine I tasted many moons ago at Ester. The thing then that stood out was its unobtrusive purity, like a tonic, and Cabernet tonic! As its aged in older barrels, no wood character has been imparted. A certain softness/roundness is achieved through the oxygen exchange through  the porous wooden staves. With an empathise on pure dark red stone fruits,  which are intertwined with a classic cassis character that envelops the senses.
