Aroma of rock pool, pear and wood smoke. Light and energetic on the palate with a delicious dollop of creamy fruit. The vineyards are of 20 years plus, dry grown on shallow clay soils, are key to the fine body of this wine. Only free run portion of less than 650 litres per ton protect the delicacy, vibrancy and natural fine acidity.
LOOKS LIKE… Pale gold
SMELLS LIKE… Oyster shell and sea spray, then pear, a little honey
DRINK WITH… Après beach, pool, sailing ship with oysters, cavello nero tart
CELLAR UNTIL… Drink when fresh, best within 3-4 years
Winery
Exclusively grown on our winery vineyard, the grapes were picked on the 14th and 15th of March when the grapes are a hot pink colour and still rich with acid. Whole bunch pressed with a low yield per ton captures the delicacy; zero sulphur through the process of yeast and malolactic fermentation. Left on lees without batonage until racking and bottling September 7th 2023. Polish filter, unfined.
Vineyards
From our Balnarring sub-region vineyards, Campbell & Christine as well as Hester. Both sites are managed by Quealy viticulture, organic principles (uncertified), dry grown.
The vineyards are crawling with insects; beetles, snails, moths, earwigs and we don’t want them all but we have learnt to live together. We like to hurry the ripeness so we harvest before the party starts; it’s where the vineyard dictates the style.
