Coonawarra has one of the longest growing seasons for Chardonnay in the world, allowing the fruit to develop and ripen slowly, with sufficient natural acidity for palate balance. The finest parcels of fruit from the vineyard adjacent to Bond Road on the Wilgha property in Coonawarra were selected for inclusion in the Bond Road Coonawarra Chardonnay.

Fermented in French oak hogsheads, where it remains on yeast lees for six months, this Coonawarra Chardonnay has a complex palate with fresh, vibrant green apple, pear, melon and nectarine primary fruit flavours. A small portion of the wine is encouraged to undergo male-lactic fermentation, which adds softness to the mouth-feel and a slight buttery note to the nose and palate.

The resulting Hollick Coonawarra Bond Road Chardonnay is complex and restrained, with a crisp acid finish. This wine was previously referred to as the Reserve Chardonnay due to its complex characteristics.
