Mada Blanc 2025 by Hamish Young of Mada Wines in the Hilltops/Canberra sphere is a wildly aromatic white blend from Freeman Vineyards in Prunevale, Young – think musk sticks, lychee and fairy floss wrapped around a zesty, spicy, genuinely refreshing frame. This Mada Wines Blanc 2025 is a field blend of Pinot Gris, Gewürztraminer and Riesling, picked on 20 February off granite and clay‑loam over shale, so you get perfume and texture riding on a cool‑climate spine.

On the palate it’s medium‑bodied but bright, with lychee, pear, citrus and Turkish‑delight notes carried by lively acidity and a gently spicy, phenolic feel from 15 hours’ cold soak and moderate pressings. Fermented cool in stainless steel, it stays clean and precise while those skins add a fine, mouth‑coating grip that makes it far more serious than its playful aromatics first suggest. The result is an expressive, modern Alsace‑inspired white that’s both highly moreish and properly food‑ready.

Food‑wise, Mada Blanc 2025 is a dead‑set winner with Thai and Vietnamese dishes, fragrant curries, Korean fried chicken, laksa, chilli crab, or anything in your weeknight rotation that brings spice, aromatics or a bit of richness.
