He’s played around with the Pet-Nat style for a few years now, Peter Dredge, but he thinks he’s onto a winning formula here.
This is mostly saignee Pinot Noir from his Tasmania Pinot Noir. Not happy with the chunky, chewy bits so often found in the bottom of other Pet-Nats, Dredge has disgorged each of these bottles and topped them with still fermenting Riesling juice to create a fresh and fizzy drink just ready for guzzling.
Dredge only makes this wine in tiny quantities. If you want a crack at the hilariously named Dr. Ongo, you’ll need to be quick.
