About this product

Dr. Edge Riesling 2025 from Tasmania is a racy, textural cool‑climate Riesling built on bright citrus fruit, gentle phenolics and a lick of residual sugar for balance rather than sweetness. It’s a blend of Derwent Valley, Tamar Valley and Coal River Valley fruit, giving a lovely cross‑section of Tassie acid line and aromatic lift.

On the nose, Dr. Edge Tasmania Riesling 2025 shows yellow apple, lime and grapefruit with hints of rose petal, almond blossom and crushed stone, plus a lemon‑squash juiciness that feels very inviting rather than austere. The palate is all about tension and texture – juicy citrus and green apple flavours over powdered‑rock minerality, a slight quinine bite and excellent length, with the small amount of residual sugar simply rounding the edges rather than making it taste sweet. It’s naturally fermented, pressed to a mix of clay amphora, old French oak and stainless, then left on lees for extra complexity before bottling unfined.

This Dr. Edge Riesling 2025 is spot‑on with freshly shucked oysters, kingfish crudo, Thai salads, chilli‑lime prawns or even pork schnitzel, where its electric acidity and subtle texture cut through richness beautifully. It drinks brilliantly on release but will happily evolve over most of the next decade, building more honeyed and toasty notes while keeping that Tassie line of acidity.
