Domenica Gamay 2025 from Peter Graham’s high‑set granite soils in Beechworth is a bright, serious take on Gamay, modelled on top Cru Beaujolais yet stamped with a distinctly Victorian, cool‑climate accent. This 2025 Domenica Estate Gamay is organically farmed, fermented in open concrete with a portion of whole bunch and raised in oak for fine structure and detail.
In the glass, expect a vivid ruby hue and an expressive nose of black cherry, raspberry, tobacco, forest floor, fennel seed, cacao, wet stone and heirloom rose petals. The palate is medium‑bodied and wonderfully precise, with silky tannins, crunchy red and black fruits, savoury spice and crisp natural acidity stretching the wine long, making it both vibrant now and suited to medium‑term cellaring.
Domenica Gamay 2025 is spot on with charcuterie boards, roast chook, grilled pork sausages or a simple steak frites, its brightness cutting through fat while the savoury edge matches richer flavours.
