Tim Smith Eden Valley Viognier 2025 is a beautifully composed Eden Valley white from Barossa winemaker Tim Smith, bringing ripe stone fruit, aromatic spice and polished oak together with real finesse. Sourced from two vineyards, this vibrant Australian Viognier spends six months on lees in Hungarian and French oak, building depth without heaviness.
Peach, nectarine and fresh apricot aromas rise with fennel seed, ginger, lemongrass and yellow florals, while a discreet cedar-oak edge adds complexity. The palate is layered and lightly viscous yet fresh and controlled, with flinty detail, bright acidity and a long, dry lemon-spiced finish.
Chill the 2025 Tim Smith Viognier lightly and pour it with roast chicken, pork cutlets, lobster, creamy seafood pasta or mildly spiced Moroccan dishes. Its generous fruit and silky shape flatter richer flavours, while the clean citrus line keeps each mouthful fresh. This is a seriously smart bottle for a dinner party.
