Domenica Estate Shiraz 2025 from Peter Graham’s elevated Beechworth vineyard is a striking cool-climate Shiraz, grown on a steep, south-facing granite slope at 450 metres. It delivers powerful dark fruit, violet perfume and peppery mineral detail, with the poise and structure to impress now or cellar confidently.
Blackberry, dark cherry and plum skin are layered with violets, graphite, crushed rock, tar, fresh earth and white pepper. Domenica Estate Shiraz is medium to full-bodied and intensely flavoured, yet remarkably fresh, with ripe structured tannins, savoury spice and a long, mineral-driven finish that never feels heavy.
Decant this Beechworth Shiraz for an hour and serve with chargrilled rib-eye, rosemary lamb shoulder, venison pie or mushroom and black pepper pasta. Its dark-fruit depth loves smoke and savoury richness, while the wine’s granite tension and peppery lift keep hearty dishes beautifully balanced.
