Seven Eves Syrah 2021 (bottled as Seven Eves Whole‑Bunch Syrah) is a bright, ultra‑fresh Adelaide Hills shiraz made in a lighter, fragrant style rather than a heavy, oaky red. It comes off the sustainably farmed Saint Clar vineyard at Macclesfield and is made with a high proportion of whole bunches to emphasise perfume and spice.

In the glass, expect vivid red and blue fruits – think sour cherry, raspberry and boysenberry – with plenty of whole‑bunch lift: pepper, dried herbs, stemmy spice and a touch of florals. The palate is medium‑bodied, crunchy and savoury, with pithy, whole‑bunch tannins and a brisk, sour‑cherry finish that’s more about energy and detail than sheer weight.

This 2021 Seven Eves Syrah 2021 cleaned up at the Adelaide Hills Wine Show, taking Best Wine of Show, Best Red, and Best Shiraz – a serious result for such a small producer. It’s superb with charcuterie, grilled lamb, spice‑rubbed meats or wood‑fired veg, and is especially good slightly chilled, poured like a serious “bistro” syrah rather than a blockbuster.
