Heathcote Estate’s single vineyard shiraz is grown on 500‑million‑year‑old red Cambrian earth, giving small, intensely flavoured berries, deep colour and firm yet fine tannins. Fermented in traditional open or oak fermenters with a portion of whole bunch and matured in French oak puncheons, the style is intense and layered – blackberry, dark cherry and plum over pepper, baking spice, graphite and ironstone notes, with a long, savoury finish.

You can comfortably line up hearty dishes – grilled ribeye, slow‑cooked beef or lamb shoulder, venison, rich mushroom ragù or aged cheddar – where that combination of dark fruit, spice, tannin and mineral drive has the structure to match fat, protein and char.
