Shiraz provides the backbone and structure, contributing dark fruit notes such as blackberry and plum, along with signature peppery spice and depth. It adds body and tannins, giving the blend power and ageing potential while still allowing Grenache’s fruitiness to shine.

Mourvèdre, sometimes called Mataro here, rounds out the blend with earthy, savoury complexity, firm tannins, and flavours of game, leather, and Mediterranean herbs. It adds structure and depth, helping the wine develop more complexity over time.

Typical GSM blends vary in proportions, with Grenache often dominating for a softer, fruit-driven style; Shiraz-led versions being bolder and more tannic; and balanced blends offering a harmony of fruit, spice, and savoury notes. The result is a layered wine with red and dark berries, spice, earthy undertones, and a smooth finish.
