Acacia blossom and elderflowers drift from the glass alongside white-fleshed fruit and hints of citrus in this Tommasi Le Volpare Soave Classico DOC 2024, a refined expression of 100% Garganega from the volcanic basalt soils of Mount Foscarino in Monteforte d’Alpone’s historic Classico zone. Pale straw yellow with brilliant green highlights, this pristine white comes from Le Volpare vineyard where vines trained using traditional Guyot and Pergola Veronese systems create exceptional purity. Fermented and matured six months in stainless steel, it delivers fresh elegance with outstanding value.
The palate is dry, agreeably harmonious and well-balanced with notes of white fruit flowing through before a tangy finish reminiscent of fresh almonds. Lively and fresh with delicate fruity character and an almond aftertaste, this Soave showcases the mineral intensity that volcanic soils bring. Light and excellent, it captures the essence of this enchanting medieval town dominated by its imposing castle.
Steamed fish, fresh oysters or seafood risotto pair beautifully where the lively acidity and tangy almond notes enhance delicate briny flavours perfectly. Serve chilled at 10-12°C with tartare, sea bass or fresh cheeses.
