Sentio Pinot Noir 2024 from Chris Catlow’s Sentio Wines and Mount Gambier is a strikingly pure, cool-climate Pinot Noir shaped by limestone soils and maritime influence. It is bright, savoury and quietly complex, delivering exceptional finesse for anyone who loves a more serious, site-driven Australian Pinot.
Red cherry, wild raspberry and plum mingle with violet, cardamom, cracked pepper and sappy herbs, while undergrowth and a discreet meaty note bring added depth. Sentio Pinot Noir 2024 is finely structured and energetic, combining fresh acidity, sinewy tannins and a subtle saline edge through its long, elegant finish.
Pair this Mount Gambier Pinot Noir with duck rillettes, roast quail, grilled salmon or mushroom and truffle pasta. Its cool red-fruit profile and earthy spice are brilliant with savoury, umami-rich dishes, while the crisp mineral line keeps every bite and sip feeling fresh, polished and moreish.
