Mitchell’s Peppertree Sparkling Shiraz NV from the Clare Valley is a seductive red sparkling blend crafted from fruit grown in their Watervale vineyard planted in 1960, using reserved barrels of the most full-bodied tannic material dating back to 1989. Bright ruby to light red in the glass, a fine bead lifts youthful sour cherry and mulberry alongside earthy undertones, spicy black cherry, bitter chocolate and minty notes with a delectable earthiness at the core. Bottle fermented and aged on lees for 18 months before dosage with eight-year-old fortified Shiraz creates lingering effervescence with a leather structure expressing those aged components beautifully.

This Clare Valley Sparkling Shiraz pairs brilliantly with gamey meats like duck where its intense, full character complements rich flavours, while butterflied lamb on the barbecue or classic steak allow the wine’s peppery finish to shine. The chocolate tart for dessert also makes an ideal match with the wine’s sweet berry fruit and dark chocolate notes.
