M. Chapoutier Shay’s Flat Vineyard Block A3 Shiraz 2021 from Victoria’s Pyrenees is a dark, brooding single‑block Shiraz that channels high‑country altitude and schist‑quartz soils into a seriously refined, Rhone‑styled Aussie red. It’s powerful yet beautifully composed – one for the serious Shiraz drinkers.

In the glass, expect deep dark red colour with purple hues, a bright, complex nose of blueberry, blackberry and dark cherry, laced with black olive, tobacco, violet, liquorice and white pepper. The palate is savoury and spice‑laden with black fruits and liquorice at its core, framed by fine, supple but persistent tannins from long maceration and 12 months in French oak (about 20% new), giving length and real elegance.

On the table, it shines with grilled meats – rib‑eye, lamb backstraps, venison, chargrilled beef or BBQ – as well as slow‑braised beef cheeks, osso buco and rich mushroom dishes. With organically farmed fruit, concrete fermentation and its structural backbone, Shay’s Flat Vineyard Block A3 Shiraz 2021 is built to age gracefully for at least six years and likely longer, developing more savoury, gamey and tobacco complexity in bottle.
