Dormilona Clayface Chenin Blanc 2022 is a natural wine from Margaret River made by Josephine Perry. The grapes are hand-harvested from the Yungarra vineyard, then destemmed and fermented entirely in large Italian amphorae. The wine undergoes fermentation on skins for a full month before being pressed back into amphora to settle and then bottled without fining or filtration. It offers bright acidity, subtle earthy tones, and a textured finish, showcasing a distinctive and vibrant expression of Chenin Blanc with a natural, minimal intervention approach.
