Domaine Séguinot‑Bordet Petit Chablis 2024 from the right bank of the Serein in northern Burgundy is a bright, racy Chardonnay that captures classic Chablis tension with a modern, super‑pure edge that’s spot on for Aussie seafood nights. This vintage of Domaine Séguinot‑Bordet Petit Chablis 2024 shows the finesse and precision Jean‑François Bordet has become known for.
In the glass you’re looking at pale straw with green flecks, a really luminous, crystalline colour. Aromatically it’s all lemon zest, verbena, green apple, white flowers and a twist of crushed seashell over a fine, chalky mineral core, with just a suggestion of biscuit and soft cream from time on lees adding subtle complexity. The palate is dry, light to medium‑bodied and very zesty – citrus and green melon flavours drive through a steely, flinty line of acidity into a long, saline, mouth‑watering finish.
Serve this Petit Chablis with Coffin Bay oysters, natural or with a simple mignonette, and it’ll absolutely sing. It’s equally at home alongside Spencer Gulf prawns, pan‑fried whiting, salt‑and‑pepper squid, goat’s cheese tarts or a classic roast chook with lemon and thyme – anywhere you want a super‑fresh, mineral, dry white that cuts through richness and lifts the whole plate.
