Cantina di Soliera Lambrusco Grasparossa di Castelvetro Secco DOC is a deep, ruby‑red sparkling from Emilia‑Romagna that shows just how grown‑up and delicious real Lambrusco can be. This Cantina di Soliera Lambrusco Grasparossa di Castelvetro Secco is made from Lambrusco Grasparossa – the most structured of the Lambrusco grapes – using the Charmat method for a fresh, vibrant style with a gentle spritz.
The nose bursts with plum and ripe black cherry, hints of violet and a vinous, grapey lift. On the palate it is fresh and lively with pure crushed black fruits, balanced acidity, a touch of sweetness for flesh and a clean, dry finish with a little nip of tannin to keep it savoury and moreish. It is playful yet properly structured, making it fantastic fun at the table.
This style is made for rich, fatty foods – think salumi, mortadella, cotechino, sausages, ragù‑laden pasta, pizza and medium‑aged cheeses, and it is even brilliant with spicy Asian dishes or as a lighter, sparkling alternative to Port alongside blue cheese. Serve well chilled in a proper wine glass and let the bubbles and black fruits do the work.
