The palate is medium‑plus bodied, with ultra‑fine tannins, bright acidity and a long, savoury, saline finish that feels graceful yet ageworthy.
This is a cracking match for braised beef cheek, osso buco, mushroom ragù, truffle risotto or roast lamb, where the wine’s perfume and structure cut through richness. It will also shine with game birds, chargrilled chops and aged hard cheeses like Parmigiano or Grana Padano, especially on cooler nights when you want something complex and warming in the glass.
