This Allevare Gippsland Sauvignon Blanc 2023 is barrel‑fermented, whole‑bunch pressed and aged in old French oak puncheons for around nine months on full lees, bringing savoury depth and softness without obvious oak flavour. It feels more like clever white Bordeaux or Semillon‑Sauv than classic Kiwi Sav, with a real sense of site and intent.
