Assyrtiko is an ancient and highly esteemed white grape variety indigenous to Greece, with its spiritual home on the volcanic island of Santorini. With a history dating back over 3,000 years, Assyrtiko is considered one of the oldest grape varieties in the world. It thrives in Santorini’s unique terroir-volcanic soils, hot and dry climate, and cooling sea breezes-which impart the grape’s signature minerality and resilience. The grape is remarkably resistant to drought, strong winds, and intense sunlight, making it perfectly suited to the island’s challenging conditions. Traditional “koulara” basket-shaped vine training is used to protect grapes from harsh winds and sun. While Santorini remains the benchmark, Assyrtiko is now cultivated throughout Greece and in select international regions, including Australia and California.
