Elderton Cabernet Sauvignon 2021 from Elderton Wines in the Barossa Valley is a classic, premium Barossa cab – dark, structured and deeply varietal, with a real sense of place from the Nuriootpa vineyard. This Elderton Estate Cabernet Sauvignon 2021 shows richness, elegance and age‑worthy bones in equal measure.

Expect a concentrated bouquet of blackberries, black forest fruits and roasted plum, woven with violets, dried sage, mint and savoury herbs, plus smoky, toasty French oak. The palate is full‑bodied, dry and firmly structured, carrying cassis, baked earth, anise, chocolate and clove over ripe yet assertive tannins and fresh acidity, finishing long, dark and convincingly premium.

This is built for rich, protein‑driven dishes – think rib‑eye steak, lamb racks, beef cheeks, venison pies and mushroom and thyme pot pies, where its tannin and depth can really get to work. It will also handle mature cheddar, aged gouda and hard, nutty cheeses beautifully, and will reward 5–10 years in the cellar if you want that classic Barossa Cabernet savouriness to really emerge.
