About this product

Saison Vermouth Black Walnut 2026 from Melbourne is a beautifully dark, complex Australian aperitif, built around organic unripe walnuts and walnut leaves, then aged in ex-whisky French oak. It is a serious, winter-ready vermouth that rewards slow sipping and makes an exceptional cocktail ingredient.

The nose brings dark walnut, roasted grain, dried cumquat and savoury bay leaf, with earthy Australian wormwood adding a fine bitter edge. Saison Black Walnut Vermouth is layered and umami-rich, yet brighter than its deep colour suggests, unfolding with citrus lift, gentle menthol freshness and long, nutty oak spice.

Serve this Black Walnut Vermouth chilled over a large ice cube with an orange twist, or lengthen it with dry ginger ale and fresh lime. It is superb alongside aged cheddar, smoked almonds, charcuterie or mushroom dishes, and brings dark, bittersweet depth to a Negroni or Manhattan-style cocktail.
