In the glass, Escalier Shiraz 2018 is deep dark purple, with a really intense nose of vibrant black fruits, floral spice and tapenade notes. The palate layers boysenberry, plum, malt and fully integrated smoked cedarwood with leaf matter, spice, lifted florals, undergrowth and dried stonefruit, plus Asian spice, graphite and bitter dark chocolate, giving a delicious, highly engaging profile.

From an Aussie sommelier’s lens, I’d be lining Moppity Escalier Shiraz 2018 up with slow‑roasted beef rib, venison backstrap or wagyu rump to match its richness, tannin and savoury complexity. It’s also superb with charcoal‑grilled lamb, hard aged cheeses and a bitter dark‑choc dessert, where that power‑packed, vibrant yet silky finish can really show off.
