Rymill The Surveyor Cabernet Sauvignon 2022 is Rymill Coonawarra’s flagship Cabernet, selected from the most impressive barrels of the vintage to show the power, polish and unmistakable cool-climate character of elite terra rossa fruit.
The Rymill Surveyor Cabernet Sauvignon 2022 is intense and tightly packed with blackberry, cassis and black plum, lifted by dried herbs, menthol, mint, roast capsicum and bay leaf. Dark chocolate, cedar, five spice and peppercorn add depth, while compact fruit sweetness and silky yet commanding tannins create a long, stony, brooding finish.
Decant this Coonawarra Cabernet Sauvignon for prime rib, eye fillet, roast lamb or slow-braised beef cheeks. It will also reward a match with venison, truffle dishes and aged cheddar. Made only in the best years and built with 100% new oak, this is a serious collector’s Cabernet with the structure to cellar confidently.
