Rymill Maturation Release Cabernet Sauvignon 2020 is a beautifully evolved Coonawarra Cabernet, patiently matured by Rymill before release to showcase the seamless harmony, savoury detail and softened power that only bottle age can deliver.
The Rymill Maturation Release Cabernet Sauvignon 2020 layers cassis, blackcurrant and dark cherry with tobacco leaf, cedar, roast coffee and classic Coonawarra mint. Notes of violet, anise, graphite and dried herbs emerge across a full yet composed palate, while mature tannins feel velvety and polished beneath the wine’s vivid, lingering freshness.
Decant this mature Coonawarra Cabernet Sauvignon for roast beef, lamb shanks, venison pie or slow-braised short ribs. Its savoury complexity is equally brilliant with mushroom Wellington, aged cheddar or dark chocolate. This is a ready-to-enjoy cellar-aged red with enough elegance and structure to reward further patience.
