Aromas of blackberries, boysenberry and dark plum leap from the glass, backed by liquorice, cocoa and a twist of black pepper for a richly layered nose that marks Chapel Hill Abacus Shiraz 2021 as a classic Vale shiraz.

The palate is dense and mouth–filling yet nicely balanced, with ripe black fruits, dark chocolate, subtle dried herbs and velvety tannins giving a long, satisfying finish. It is spot on with grilled ribeye, slow–cooked lamb shoulder, gourmet sausages or a rich mushroom and thyme ragù, and will also shine with aged cheddar or a good pecorino.
