Aromatically, this Hill 5 Shiraz Cabernet 2021 is all lifted dark fruits, jube, chocolate and spice, with a little roasted meat and charry oak in the background. The palate is rich and full‑bodied with great weight and length, flavours of black cherry, plum, roasted meats and dark chocolate wrapped around savoury spice, soft dusty tannins and nicely judged French oak. It feels plush yet structured, with enough line and acid to keep things fresh and moreish.
