Dormilona Semillon

Dormilona Semillon 2022 from Margaret River is an organically farmed white wine made from fruit sourced from the Yungarra vineyard on Yallingup hill. The wine is hand-harvested, whole bunch pressed, and fermented cool in tank, followed by four months on lees to enhance texture and complexity. It showcases bright aromas of waxy apple, lime rind, and floral blossom, with a fresh and racy palate carrying citrus notes and a gentle water cracker undertone. The wine is zippy and dry on the finish, making it refreshing and precise, well-suited to pair with light seafood dishes, salads, or as an aperitif. It has an alcohol content of around 11.5%.
