Hentley Farm Cabernet Sauvignon 2024, Hentley Farm, Barossa Valley. This is a proper Barossa Cabernet – plush blackcurrant and blackberry with a core of ripe plum, framed by hints of cassis, dark chocolate, bay leaf and subtle cedar spice, all wrapped in fine, graphite–like tannins for structure.

The Hentley Farm Barossa Cabernet Sauvignon 2024 shows bright, lifted fruit thanks to those shallow red clay loam soils over limestone, giving vibrancy as well as depth, with a long, gently savoury finish that will keep developing in bottle. It is a cracking option with a char–grilled Scotch fillet, lamb backstrap, slow–cooked beef ribs or a rich mushroom ragù, and will sit beautifully on a Sunday roast table with rosemary potatoes and gravy.
