Domaine Pavelot Savigny‑lès‑Beaune 1er Cru La Dominode 2022 is a powerful yet finely etched Burgundy Pinot Noir from old vines on the limestone‑rich slopes of Savigny, and it’s widely tipped as one of the estate’s standout wines in this vintage. La Dominode is always the benchmark at Pavelot, and 2022 looks set to continue that run, with serious concentration, mineral drive and clear ageing potential.

The 2022 La Dominode draws on a large 2.2‑hectare holding with a big swathe of very old vines – roughly 40% around 90 years old, another 30% 40–50 years, and the balance 10–15 years – which gives incredible depth of fruit and a tightly packed core of red berries. Expect black plum, raspberry and dark berry fruit, spiced with anise and underpinned by newly turned earth, florals and a distinct stony minerality. The palate is medium‑bodied but dense, combining a silken mouthfeel with edgier, angular tannins that add tension, leading into a powerful, compact, mineral‑driven finish clearly built to unwind over a decade or more.

This 1er Cru La Dominode 2022 is best thought of as a long‑term cellar wine, with critics repeatedly noting that it’s currently tight and in need of time for its aromatics to unfurl and its structure to soften. It will be superb with classic Burgundy pairings like roast duck, game birds, lamb, mushroom dishes and truffle‑driven cuisine once it has a few years in bottle, where its combination of spice, florals, earth and limestone‑cut acidity can really shine.
