Mac Forbes Cuvée C.H. Blanc de Noir 2021, named for Carole Helen, is a seriously classy traditional‑method Pinot Noir from the Upper Yarra, all fine bead, tension and understated luxury in the glass. This 2021 Mac Forbes C.H. Blanc de Noir is the first release of a deeply personal project, only made in top years and treated with kid‑gloves from vineyard to disgorgement.

Aromatically it’s poised and subtle – small red berries, red apple skin, orange oil and a whisper of brioche and pastry, with silty, mineral detail underneath and just 1 g/L dosage to keep things ultra‑brut and incisive. The palate is bright, crisp and refreshing, fine‑bubbled and silky, carrying red apple, citrus peel and gentle honeyed complexity from three years on lees, finishing long and savoury rather than sweet. Fruit comes from Woori Yallock and Gladysdale, hand‑picked and direct‑pressed as whole bunches, then fermented in old barriques before tirage.

On the table, this is tailor‑made for oysters, kingfish crudo, prawn cocktails or classic smoked salmon blinis, where that racy line and fine bead cut beautifully through richness.
