WINEMAKING
The grapes are picked early and gently pressed prior to the initial fermentation in stainless steel vats. Barrel fermentation and lees stirring contributes complexity and creamy texture, prior to the secondary fermentation – known as the Martinotti  – or more commonly Charmat method, creating a dry, vivacious style that mirrors its European origins.
