Domaine Benoit Badoz Chardonnay Les Roussots Côtes du Jura 2023 is a mineral–driven, organically grown Jura chardonnay that trades overt oak for tension, citrus and a faintly oxidative savoury edge. Fruit comes from old vines on grey Lias marl in the Les Roussots lieu–dit at Poligny, fermented with indigenous yeasts in stainless steel to showcase terroir purity.

The nose shows lemon, citrus peel and white peach over acacia blossom, white flowers and wet crushed stone, with subtle dried fruit and nutty complexity that’s very Jura. The palate is crisp, fresh and medium–bodied, opening on citrus, white florals and stone fruits before moving into chewy dried fruit hints, marked salinity and a long, spicy, mineral finish. There’s a slight oxidative note adding depth without heaviness, keeping the wine lively, chalky and mouthwatering rather than rich or buttery.

At the table it’s spot–on with Jura classics like fondue or rabbit in cream sauce, as well as salads, grilled or creamy sauced fish (pike–perch, trout), roast chook, and washed–rind or Comté–style cheeses. Serve it cool rather than fridge–cold to let that minerality and spice really unfurl.
