Fallen Giants Cabernet Sauvignon 2021 from the Grampians is a medium–bodied, cool–climate cabernet that packs in classic black fruits, leafy spice and sinewy tannins without ever feeling heavy. Fruit comes off the organically farmed, high–altitude Halls Gap vineyard on granite and ironstone soils, giving lift, freshness and a distinctly regional savoury edge.

In the glass you’re looking at deep ruby with aromas of blackcurrant, boysenberry and black cherry, supported by plum, cassis, fresh leaf, pepper, tobacco, undergrowth and quality oak spice. The palate is medium–bodied yet intense, with blackcurrant, plum and black cherry framed by chewy, sinewy cabernet tannins, subtle cedar, savoury notes and fine acidity driving a long, balanced finish. It’s structured but approachable now, and has the bones to age comfortably over most of the next decade.

On the table, it’s a natural with grilled lamb chops, rump steak, roast beef, hearty ragù or mushroom and thyme pies, where that dark fruit and tannin really shine.
